2 lobster
8 shrimp
1-2 crab legs

For the Sauce:

1 cup Mayonnaise
1 tsp capers chopped fine
1 1/2 tsp Dijon mustard
2 tsp chopped Tarragon
1 1/2 tsp Gherkins chopped fine
zest and juice of 1 lime
zest and juice from 2 lemons
salt and white pepper
2 Avocados
lemon juice
1 cup Alfalfa sprouts


Combine all ingredients for sauce and mix well and adjust seasoning.  Prepare and let rest for at least 30 minutes before serving to allow flavors to develop.  Rinse seafood and steam or in pot of simmering water cook for 6-8 minutes.  Mix 3 Tbsp of sauce with warm seafood and place mixture in refrigerator to chill.  Cut avocados in halves and remove seed.  Season inside with lemon juice and salt and white pepper.  Arrange seafood mixture in avocados and garnish with lemon zest and alfalfa sprouts.  Serve remaining sauce on the side.
